In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender.

Add lentils, vegetable broth, tomato paste, bay leaves, thyme, salt, and black pepper. Bring to a boil.

Reduce heat and simmer for 30-40 minutes, or until lentils are cooked and flavors have melded together.

Remove bay leaves and serve hot. Garnish with fresh parsley.
