Sweet potatoes are a great source of dietary fiber and contain more vitamin A than regular potatoes.

Peel and dice the sweet potatoes.

Rinse the rice under cold water.

In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until fragrant.

Add sweet potatoes and rice to the pot, stirring for a minute.

Pour in vegetable broth and season with salt and black pepper.

Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice and sweet potatoes are cooked.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with chopped parsley.
