Rinse the lentils and cook them according to package instructions.

While the lentils are cooking, chop the red bell pepper, red onion, cucumber, cherry tomatoes, parsley, and cilantro.

In a small bowl, combine minced garlic, lemon juice, red wine vinegar, olive oil, salt, and black pepper to make the chimichurri sauce.

Once the lentils are cooked, drain and rinse them under cold water.
