Cut the zucchini into thin matchstick-sized strips.

Heat sesame oil in a pan over medium heat.

Add minced garlic and stir-fry for 1 minute.

Add the zucchini strips and stir-fry for 2-3 minutes until they are slightly softened.

Remove from heat and let it cool slightly.

In a small bowl, mix soy sauce and sesame seeds.

Pour the sauce over the cooked zucchini and toss well.

Garnish with chopped green onions.
