Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until onion is translucent.

Add sliced carrots and cook for a few minutes.

Pour in vegetable broth and orange juice. Bring to a boil, then reduce heat and simmer until carrots are tender.

Remove from heat and let it cool slightly.
