Wash and peel the potatoes. Cut them into small cubes.

Slice the onions.

In a large bowl, combine the potatoes, onions, olive oil, fresh herbs, salt, and black pepper. Toss well to coat.

Transfer the mixture to a baking dish and spread it out evenly.

Roast in the preheated oven for about 30 minutes or until the potatoes are golden brown and crispy.

Remove from the oven and let it rest for 5 minutes before serving.
