Peel and chop the potatoes.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.

Add the chopped potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the potatoes are tender.

Remove the pot from heat and use an immersion blender to blend the soup until smooth.

Stir in the fresh dill, salt, and black pepper.

Serve the soup hot, garnished with a dollop of sour cream and a sprig of fresh dill.
