Peel and trim the carrots, then cut them into long, thin strips.

In a large bowl, toss the carrots with olive oil, honey, salt, and black pepper until well coated.

Spread the carrots in a single layer on a baking sheet.

Strip the leaves from the thyme sprigs and sprinkle them over the carrots.
