Soak the rice in water for 30 minutes.

Drain the rice and keep it aside.

Heat oil in a pan and add chopped onion, garlic, and ginger. Saute until golden brown.

Add chopped bamboo shoots, carrots, and green peas. Stir-fry for 2-3 minutes.

Add turmeric powder, salt, and soaked rice. Mix well.

Add coconut milk and water. Cover and cook on low heat for 15-20 minutes or until the rice is cooked.

Garnish with coriander leaves and serve hot.
