Delicata Squash with Rosemary, Sage, and Cider Glaze
Delicata squash is often referred to as the ‘sweet potato squash’ due to its creamy texture and sweet flavor.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 400°F (200°C).

Cut the delicata squash in half lengthwise and scoop out the seeds. Slice each half into 1/2-inch thick half-moons.

In a large bowl, combine the olive oil, rosemary, sage, salt, and black pepper. Add the sliced squash and toss to coat.

Arrange the squash in a single layer on a baking sheet. Roast for 20 minutes, flipping halfway through.

In a small saucepan, combine the apple cider and maple syrup. Bring to a simmer over medium heat and cook for 5 minutes, until slightly reduced.

Remove the squash from the oven and brush with the cider glaze. Return to the oven and roast for an additional 10 minutes.

Remove from the oven and let rest for 5 minutes before serving.
