Black-Eye Pea and Collard Greens Soup is a traditional dish in Southern cuisine, often eaten on New Year’s Day for good luck and prosperity.

Rinse the black-eye peas and soak them in water overnight.

In a large pot, heat olive oil over medium heat.

Add the chopped onion, carrot, celery, and minced garlic. Saute for 5 minutes until the vegetables are softened.

Drain the soaked black-eye peas and add them to the pot.

Pour in the vegetable broth and add tomato paste, smoked paprika, cayenne pepper, salt, and black pepper.

Bring the soup to a boil, then reduce the heat to low and simmer for 25-30 minutes until the peas are tender.

While the soup is simmering, prepare the collard greens by removing the tough stems and chopping the leaves into bite-sized pieces.

Add the collard greens to the pot and simmer for an additional 5 minutes until wilted.

Stir in the lemon juice and fresh parsley.
