Heat oil in a large pot over medium heat. Add the onion, carrot, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

Add the potato, vegetable broth, diced tomatoes, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Stir in the frozen peas and cook for an additional 5 minutes.
