Cut the eggplant into cubes and soak them in salted water for 10 minutes. Heat oil in a pan and fry the eggplant until golden brown. Remove and keep aside. In the same pan, add more oil if required and sauté the onions, garlic, and ginger until golden brown. Add the tomatoes and cook until they turn mushy. Add the green chilies, turmeric powder, coriander powder, cumin powder, red chili powder, garam masala, and salt. Mix well. Add the fried eggplant and water. Cover and simmer for 10 minutes. Serve hot with rice or bread.
