Jewel Bark is inspired by the traditional British confectionery called ‘Rocky Road’. It gets its name from the colorful and jewel-like appearance of the dried fruits and nuts embedded in the chocolate bark.

  1. Line a baking sheet with parchment paper.
  2. Melt the dark chocolate in a heatproof bowl over simmering water.
  3. In a separate bowl, combine dried cranberries, pistachios, almonds, cashews, pumpkin seeds, sunflower seeds, chia seeds, coconut flakes, maple syrup, vanilla extract, and sea salt.
  4. Pour the melted chocolate over the mixture and stir until well coated.
  5. Spread the mixture onto the prepared baking sheet and flatten with a spatula.
  6. Refrigerate for 1 hour or until firm.
  7. Once firm, break into pieces and serve.
