Preheat the oven to 450°F (230°C).

Place the red bell peppers on a baking sheet and drizzle with olive oil.

Roast the peppers in the oven for about 15 minutes, or until the skins are blackened and blistered.

Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap and let them steam for 10 minutes.

Peel off the skins from the peppers and remove the seeds and stems.

In a blender or food processor, combine the roasted peppers, lemon juice, Dijon mustard, chopped chives, garlic clove, salt, black pepper, and maple syrup.

Blend until smooth and creamy.

Taste and adjust the seasoning if needed.

Transfer the dressing to a jar or container and refrigerate until ready to use.
