Fava beans, also known as broad beans, have been cultivated in Morocco for thousands of years and are a staple in Moroccan cuisine.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent.

Add Moroccan spice blend, cumin, and cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices.

Add chopped carrots, potatoes, and tomatoes to the pot. Stir to combine.

Add fava beans and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the vegetables are tender.

Stir in lemon juice, fresh cilantro, salt, and black pepper. Cook for an additional 5 minutes.

Remove from heat and let the stew rest for 10 minutes before serving.
