Preheat the oven to 400°F (200°C).

Peel and trim the carrots.

In a bowl, mix together honey, olive oil, salt, and black pepper.

Toss the carrots in the honey mixture until well coated.

Place the carrots on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
