Peel and chop the beetroot, potatoes, carrots, onion, and cabbage.

In a slow cooker, combine the chopped vegetables, tomato paste, vegetable stock, bay leaves, sugar, vinegar, salt, and pepper.

Cook on low heat for 6 hours or on high heat for 4 hours.

Remove the bay leaves and adjust the seasoning if needed.

Serve hot with a dollop of sour cream and a sprinkle of fresh dill.
