Spicy Tomato Cups
Tomatoes are technically a fruit, but they are commonly referred to as a vegetable in culinary contexts.

Preheat the oven to 400°F (200°C).

Cut off the top of each tomato and scoop out the pulp and seeds.

In a pan, heat olive oil and sauté onion and garlic until translucent.

Add red chili powder, cumin powder, coriander powder, salt, and black pepper. Cook for 2 minutes.

Fill each tomato cup with the spicy mixture.

Place the filled tomato cups on a baking sheet and bake for 10 minutes.

Garnish with fresh cilantro before serving.
