Spinach and Tofu Dumplings

Dumplings are a traditional Chinese food and are often eaten during the Chinese New Year as a symbol of wealth and good luck.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Blanch the spinach in boiling water for 1 minute, then drain and chop finely.

In a mixing bowl, combine the chopped spinach, crumbled tofu, diced shiitake mushrooms, finely chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and white pepper. Mix well.

Take a wonton wrapper and place a spoonful of the spinach-tofu mixture in the center. Wet the edges of the wrapper with water, then fold it in half to form a triangle. Press the edges to seal.

Repeat the process with the remaining wrappers and filling.

Steam the dumplings for 10 minutes, or until cooked through.

Heat a non-stick pan over medium heat. Add a little oil and pan-fry the steamed dumplings until they turn golden brown on one side.

Serve hot with soy sauce or your favorite dipping sauce.
