Vegan “fauxreo” Chocolate Sandwich Cookies
The name “fauxreo” is a play on the popular brand of sandwich cookies, Oreo, and signifies that these cookies are a vegan alternative.
This is vegan and gluten free recipe. Dish can be prepared in 100 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

In a mixing bowl, cream together vegan butter, granulated sugar, and vanilla extract.

Add almond milk and mix well.

In a separate bowl, whisk together all-purpose flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Stir in vegan chocolate chips.

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 1 hour.

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Roll out the dough on a lightly floured surface to about 1/4 inch (6 cm) thickness.

Use a round cookie cutter to cut out cookies and place them on the prepared baking sheet.

Bake for 10 minutes, then transfer to a wire rack to cool completely.

In a separate bowl, beat together vegan cream cheese, powdered sugar, and vanilla extract until smooth.

Spread the cream cheese filling onto the bottom side of half of the cookies.

Top with the remaining cookies to create sandwich cookies.
