Zucchini and Basil Soup

Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.

Add zucchini and vegetable broth. Bring to a boil and simmer for 15 minutes.

Remove from heat and let it cool slightly. Blend the soup until smooth using a blender or immersion blender.

Return the soup to the pot and heat over low heat. Stir in basil leaves, salt, black pepper, and lemon juice.

Cook for an additional 5 minutes, stirring occasionally.

Serve hot and garnish with fresh basil leaves.
