In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between, until smooth.

In a large mixing bowl, combine the shredded coconut, rolled oats, peanut butter, honey, vanilla extract, and salt. Mix well.

Pour the melted chocolate over the mixture and stir until everything is evenly coated.

Line a baking sheet with parchment paper. Use a spoon or cookie scoop to drop spoonfuls of the mixture onto the baking sheet.

Place the baking sheet in the refrigerator and let the cookies set for at least 1 hour.
