Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and cook until softened.

Add the peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

Remove the pot from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.

Return the pot to low heat and stir in the salt, black pepper, fresh mint leaves, and lemon juice. Cook for an additional 5 minutes.

Serve hot and garnish with additional mint leaves, if desired.
