Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.

Add chopped carrots and potatoes, and cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until vegetables are tender.

Remove from heat and let cool slightly. Blend the soup until smooth using an immersion blender or a regular blender.

Return the soup to the pot and stir in fresh dill, salt, and black pepper. Cook for an additional 5 minutes.

Stir in coconut milk and heat through.

Serve hot and garnish with additional fresh dill if desired.
