Cut the sweet potatoes, carrots, red bell pepper, zucchini, and red onion into bite-sized pieces.

In a large mixing bowl, combine the olive oil, sweet chili sauce, garlic powder, salt, and black pepper.

Add the vegetables to the bowl and toss until they are well coated with the sauce.

Spread the vegetables in a single layer on a baking sheet.
