Pumpkin, banana, and chickpeas are all excellent sources of dietary fiber, making this curry a healthy and filling meal.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 16.

Heat vegetable oil in a large pan over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until softened.

Add curry powder, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Stir well.

Add diced pumpkin and cook for 5 minutes, stirring occasionally.

Add coconut milk and bring to a simmer. Cook for 10 minutes.

Mash one banana and add it to the curry. Stir well.

Drain and rinse chickpeas, then add them to the curry. Cook for another 5 minutes.

Serve the curry hot with steamed rice or naan bread.

Garnish with fresh coriander leaves and lime wedges.
