Lentils are a great source of plant-based protein and are commonly used in vegetarian and vegan dishes.

Rinse the lentils and rice separately.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic to the pot. Cook until softened.

Add cumin powder, salt, and black pepper. Stir well.

Add lentils and vegetable broth to the pot. Bring to a boil.

Reduce heat to low, cover the pot, and simmer for 15 minutes.

Add rice and lemon juice to the pot. Stir well.

Cover the pot and simmer for another 10 minutes, or until the rice and lentils are cooked.

Remove from heat and let it rest for 5 minutes.

Fluff the rice and lentils with a fork.

Serve hot, garnished with fresh parsley.
