Cajun cuisine originated from the French-speaking Acadian people who were deported from Canada to Louisiana in the 18th century.

In a large pot, sauté the onion, bell pepper, celery, and garlic until softened.

Add the corn kernels and Cajun seasoning, and cook for another 2 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.

Using an immersion blender, blend the soup until smooth.

Stir in the coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.

Serve hot, garnished with fresh cilantro.
