In a large pot, heat some oil over medium heat. Add the onion, garlic, carrot, celery, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.

Add the smoked paprika and cumin. Stir well to coat the vegetables.

Add the vegetable stock, black beans, kidney beans, and chickpeas. Bring to a boil, then reduce heat and simmer for 20 minutes.

Meanwhile, prepare the lemon-pea coulis by blending the frozen peas, lemon juice, and a pinch of salt until smooth.

In a separate pan, heat the sesame oil over medium heat. Add the shiitake mushrooms and cook until they are tender, about 5 minutes.

Season the soup with salt and black pepper to taste.

Serve the soup hot, topped with a drizzle of the lemon-pea coulis and a sprinkle of sesame flavored shiitake mushrooms.
