Egyptian Red Lentil Soup

Rinse the red lentils thoroughly.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic cloves. Sauté until they turn golden brown.

Add diced carrot and tomato. Cook for a few minutes until the vegetables soften.

Add cumin powder, coriander powder, salt, and black pepper. Stir well.

Add the rinsed red lentils and vegetable broth to the pot. Bring it to a boil.

Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes or until the lentils are tender.

Remove the pot from heat and let it rest for 5 minutes.

Use an immersion blender or a regular blender to blend the soup until smooth and creamy.

Return the soup to the pot and reheat if necessary.

Stir in lemon juice.

Serve hot and garnish with fresh coriander leaves if desired.
