Rinse the wild rice under cold water.

In a large saucepan, bring the vegetable broth to a boil.

Add the wild rice to the boiling broth and reduce the heat to low. Cover and simmer for 30 minutes or until the rice is tender.

In a separate pan, heat the olive oil over medium heat. Add the garlic and onion and sauté until softened.

Add the cooked wild rice to the pan and stir to combine. Cook for an additional 5 minutes to allow the flavors to meld.

Remove from heat and stir in the pumpkin seeds, salt, black pepper, and fresh parsley.

Let the dish rest for 5 minutes before serving.
