  2. In a large bowl, mix together the rolled oats, almonds, walnuts, pumpkin seeds, sunflower seeds, and coconut flakes.
  3. In a small saucepan, heat the honey, coconut oil, vanilla extract, and cinnamon over low heat until melted and well combined.
  4. Pour the honey mixture over the dry ingredients and mix until everything is well coated.
  5. Spread the mixture evenly onto a baking sheet lined with parchment paper.
  6. Bake for 20 minutes, stirring halfway through, until the granola is golden brown and crispy.
  7. Remove from the oven and let it cool completely on the baking sheet.
  8. Once cooled, stir in the dried cranberries.
  9. Transfer the granola to an airtight container and let it rest for 30 minutes before serving.
  10. Serve with yogurt, milk, or as a topping for smoothie bowls or desserts.
