Ingredients
  • 1 cup Wheat berries
  • 1 cup Corn kernels
  • 1 cup Okra
  • 1 cup Red bell pepper
  • 1 cup Red onion
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook the wheat berries according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked wheat berries, corn kernels, okra, red bell pepper, red onion, and fresh parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
