Meanwhile, chop the carrots, zucchini, red bell pepper, and red onion into bite-sized pieces. Mince the garlic cloves. Place the chopped vegetables and minced garlic on a baking sheet. Drizzle with olive oil, salt, and black pepper. Toss to coat evenly. Roast the vegetables in the preheated oven for 20-25 minutes until they are tender and slightly caramelized. In a large bowl, combine the cooked wheat berries and roasted vegetables. Add fresh herbs and toss to combine. Let the dish rest for 5 minutes before serving. Enjoy!
