Ingredients
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 1 medium Red bell pepper
  • 1 can Tomatoes
  • 1 cup Peanut butter
  • 4 cup Vegetable broth
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Coconut milk
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Roasted peanuts
Instructions
  1. Heat oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  2. Add the diced red bell pepper and cook for another 2 minutes.
  3. Pour in the canned tomatoes and vegetable broth. Stir in the peanut butter until well combined.
  4. Add the paprika, cayenne pepper, salt, and black pepper. Stir well.
  5. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
  6. Stir in the coconut milk and cook for an additional 5 minutes.
  7. Serve the soup hot, garnished with fresh cilantro and roasted peanuts.
