Ingredients
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 medium Sweet potatoes
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 1 cup Peanut butter
  • 4 cup Vegetable broth
  • 1 can Canned diced tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Roasted peanuts
Instructions
  1. In a large pot, sauté the onion, garlic, and ginger until the onion is translucent.
  2. Add the sweet potatoes, carrots, and red bell pepper. Cook for 5 minutes.
  3. Stir in the peanut butter, vegetable broth, diced tomatoes, cumin, coriander, cayenne pepper, salt, and black pepper.
  4. Bring the stew to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender.
  5. Serve the stew hot, garnished with fresh cilantro and roasted peanuts.
