Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add diced potato and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potato is tender.

Add watercress to the pot and cook for an additional 5 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in lemon juice, salt, and pepper.

Serve the soup hot, garnished with a dollop of sour cream and chopped chives.
