  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the sliced celery and carrots to the pot, and cook for a few minutes until they start to soften.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low and let it simmer for about 20 minutes, or until the vegetables are tender.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Return the soup to the pot and stir in the coconut milk. Season with salt and black pepper to taste.
  6. Simmer the soup for another 5 minutes to heat through.
  7. Serve the soup hot, garnished with fresh parsley.
