Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.

Add the sliced celery and carrots to the pot, and cook for a few minutes until they start to soften.

Pour in the vegetable broth and bring to a boil. Reduce heat to low and let it simmer for about 20 minutes, or until the vegetables are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the coconut milk. Season with salt and black pepper to taste.

Simmer the soup for another 5 minutes to heat through.

Serve the soup hot, garnished with fresh parsley.
