Ingredients
  • 2 cup White beans
  • 2 tablespoon Olive oil
  • 3 clove Garlic
  • 2 cup Spinach
  • 1 cup Cherry tomatoes
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse and drain the white beans.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 1 minute.
  4. Add white beans, cherry tomatoes, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Add spinach and cook until wilted, about 2-3 minutes.
  6. Remove from heat and drizzle with lemon juice.
  7. Sprinkle with fresh parsley.
  8. Let it rest for 5 minutes before serving.
