Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1 ounce Almonds
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 1 juice of Lemon
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse quinoa under cold water.
  2. In a saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.
  3. While quinoa is cooking, toast the almonds in a dry skillet over medium heat until lightly browned. Set aside.
  4. Chop cherry tomatoes, cucumber, red onion, and fresh parsley.
  5. In a large bowl, combine cooked quinoa, toasted almonds, cherry tomatoes, cucumber, red onion, and fresh parsley.
  6. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  7. Pour the dressing over the quinoa salad and toss to combine.
  8. Let the salad rest for 5 minutes to allow the flavors to blend.
  9. Serve warm and enjoy!
