Ingredients
  • 14 ounce Tofu
  • 1 cup Carrots
  • 1 cup Cucumber
  • 1 cup Red bell pepper
  • 2 tablespoon Mint leaves
  • 2 tablespoon Cilantro leaves
  • 2 tablespoon Roasted peanuts
  • 1 piece Lime
  • 2 tablespoon Fish sauce
  • 1 tablespoon Honey
  • 1 clove Garlic
  • 1 piece Red chili
Instructions
  1. Drain and press tofu to remove excess water. Cut into cubes.
  2. Julienne the carrots, cucumber, and red bell pepper.
  3. Finely chop the mint leaves, cilantro leaves, and roasted peanuts.
  4. In a small bowl, whisk together lime juice, fish sauce, honey, minced garlic, and chopped red chili.
  5. In a large bowl, combine tofu, julienned vegetables, herbs, and peanuts.
  6. Pour the dressing over the salad and toss well to combine.
  7. Serve immediately and enjoy!
