  1. Preheat the oven to 180°C (350°F) and line a cupcake tin with paper liners.
  2. In a small bowl, mix together the coconut milk and apple cider vinegar. Set aside for 5 minutes to curdle.
  3. In a large mixing bowl, whisk together the gluten-free flour blend, baking powder, baking soda, and salt.
  4. In a separate bowl, cream together the coconut oil and granulated sugar until light and fluffy.
  5. Add the curdled coconut milk mixture and vanilla extract to the creamed coconut oil and sugar. Mix well.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
