Ingredients
  • 500 gram Cauliflower
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Turmeric
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  2. Add the cauliflower florets and spices (cumin, coriander, turmeric) and cook for a few minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until the cauliflower is tender.
  4. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  5. Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper.
  6. Heat the soup gently until warmed through.
  7. Serve hot, garnished with fresh cilantro.
