Heat olive oil in a large pot over medium heat.

Add onion, garlic, celery, and carrots. Cook until vegetables are softened, about 5 minutes.

Add potatoes, mixed vegetables, tomato paste, Italian seasoning, salt, black pepper, bay leaf, and vegetable broth.

Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.

Remove bay leaf and use an immersion blender to blend the soup until desired consistency is reached.
