Tagine is a traditional North African dish named after the earthenware pot in which it is cooked.

  1. Heat olive oil in a large pan over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the butternut squash, chickpeas, ground cumin, ground coriander, ground cinnamon, ground turmeric, salt, and black pepper. Stir well to coat the ingredients with the spices.
  3. Pour in the vegetable stock and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the butternut squash is tender.
  4. Stir in the dried apricots and lemon juice. Cook for an additional 5 minutes.
  5. Remove from heat and garnish with fresh coriander. Serve hot.
