Grate the carrots and chop the fresh coriander.

In a large bowl, mix together the grated carrots, chopped coriander, rice flour, baking powder, ground cumin, ground coriander, and salt.

Gradually add water to the mixture until it forms a thick batter.

Heat oil in a frying pan over medium heat.

Drop spoonfuls of the batter into the hot oil and flatten them slightly with the back of the spoon.

Fry the fritters for 2-3 minutes on each side until golden brown.

Remove the fritters from the pan and place them on a paper towel to drain excess oil.

Serve hot with your favorite dipping sauce.
