Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic cloves. Cook until onion is translucent.

Add diced bell peppers, sliced zucchini, and sliced carrots. Cook for 5 minutes.

Stir in canned diced tomatoes, drained kidney beans, drained black beans, canned corn, chili powder, ground cumin, paprika, dried oregano, salt, and black pepper.

Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let it rest for 10 minutes before serving.
