Ingredients
  • 2 teaspoon Olive Oil
  • 1 medium Onion
  • 3 clove Garlic
  • 1 medium Green Bell Pepper
  • 1 medium Jalapeno Pepper
  • 1 can Green Chilies
  • 1 can Canned Diced Tomatoes
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 cup Vegetable Broth
  • 1 can Canned Kidney Beans
  • 1 can Canned Corn
  • 2 tablespoon Fresh Cilantro
  • 4 wedge Lime
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, green bell pepper, jalapeno pepper, and green chilies. Saute for 5 minutes until vegetables are softened.
  3. Stir in diced tomatoes, cumin powder, chili powder, salt, and black pepper. Cook for another 5 minutes.
  4. Add vegetable broth, kidney beans, and corn. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove from heat and let it rest for 5 minutes.
  6. Serve hot with fresh cilantro and lime wedges.
