Preheat the oven to 200°C (400°F).

Wash and chop all the vegetables into bite-sized pieces.

In a large bowl, combine the chopped vegetables, minced garlic, olive oil, fresh thyme, fresh rosemary, salt, and black pepper. Toss well to coat all the vegetables evenly.

Transfer the vegetables to a baking sheet and spread them out in a single layer.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown.
